Step 2: Shape the Biscotti

2. Divide the dough in half and shape each portion into a log about 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet, ensuring there's space between them as they will expand while baking.

Step 3: Bake the Biscotti Logs

1. Bake the logs in the preheated oven for 25-30 minutes, or until they are lightly golden and firm to the touch.
2. Remove the logs from the oven and let them cool for about 10 minutes on the baking sheet.

Step 4: Slice and Second Bake

1. Carefully transfer the logs to a cutting board and slice them diagonally into 1-inch thick pieces.
2. Return the slices to the baking sheet, cut side up, and bake for an additional 10-15 minutes, turning them halfway through. This ensures they become crispy and golden brown.

Step 5: Cool and Serve

1. Once baked, remove the biscotti from the oven and let them cool completely on a wire rack.
2. Once cooled, they can be enjoyed immediately, stored in an airtight container, or even dipped in chocolate for an extra special treat.
