How to Make Traditional Italian Focaccia Bread

Focaccia bread is a traditional Italian flatbread known for its crispy crust and soft, airy interior. It's perfect for serving with soups, salads, or just as a snack on its own. Making focaccia at home is easier than you might think. Follow this guide to create your very own authentic Italian focaccia bread.

Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons salt
  • 2 teaspoons sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 3/4 cups warm water (about 110°F or 43°C)
  • 1/4 cup olive oil, plus extra for drizzling
  • Fresh herbs (such as rosemary or thyme)
  • Sea salt for topping

Instructions

1. Prepare the Yeast

In a small bowl, combine the warm water, sugar, and active dry yeast. Allow it to sit for about 5 to 10 minutes until it becomes frothy. This indicates that the yeast is active.

2. Mix the Dough

In a large mixing bowl, combine the flour and salt. Once the yeast mixture is ready, pour it into the flour mixture along with 1/4 cup of olive oil. Stir until a shaggy dough forms.

3. Knead the Dough

Transfer the dough onto a floured surface. Knead for 10 minutes until it becomes smooth and elastic. If the dough is sticky, sprinkle a little more flour as needed.

4. First Rise

Lightly oil a clean bowl and place the dough inside, turning it to coat it in oil. Cover the bowl with a damp cloth and let it rise in a warm place for about 1 to 2 hours, or until it doubles in size.

5. Prepare the Baking Pan

Grease a baking pan (typically a 9x13 inch rectangular pan) with olive oil. Once the dough has risen, gently punch it down to release the air. Transfer it to the prepared baking pan.

6. Shape the Dough

Using your fingers, gently stretch and press the dough to fit the pan. Make sure to create dimples all over the surface of the dough, as this characteristic texture is essential for focaccia.

7. Second Rise

Cover the pan with a cloth and let the dough rise again for about 30 minutes. Meanwhile, preheat your oven to 425°F (220°C).

8. Season the Focaccia

After the second rise, drizzle additional olive oil over the top and sprinkle with sea salt and chopped fresh herbs. You can also add toppings such as cherry tomatoes, olives, or thinly sliced onions if desired.

9. Bake the Focaccia

Bake in the preheated oven for 20 to 25 minutes, or until the focaccia is golden brown and sounds hollow when tapped on the bottom.

10. Cool and Serve

Once baked, remove the focaccia from the oven and let it cool in the pan for about 10 minutes. Transfer to a wire rack to cool completely before slicing. Serve warm or at room temperature.
