How to Make Traditional Italian Zeppole at Home

  • 4 large eggs
  • Vegetable oil for frying
  • 1 cup pastry cream (store-bought or homemade)
  • Powdered sugar for dusting

Instructions

Step 1: Prepare the Choux Pastry

In a medium saucepan, combine the water, butter, salt, and sugar. Heat the mixture over medium heat until it reaches a rolling boil. Remove the pan from heat and quickly stir in the flour using a wooden spoon. Mix until the dough pulls away from the sides of the pan and forms a ball.

Step 2: Incorporate the Eggs

Allow the dough to cool for about 5 minutes. Once it’s cool enough to handle, add the eggs one at a time, mixing well after each addition. The dough should be smooth and glossy.

Step 3: Shape the Zeppole

Transfer the dough to a pastry bag fitted with a large star tip. On a baking sheet lined with parchment paper, pipe out circular shapes, about 3 inches in diameter. You can create a ring by piping two circles that overlap slightly, which will give a nice texture when fried.

Step 4: Heat the Oil

In a deep skillet or frying pan, pour enough vegetable oil to submerge the zeppole, about 2-3 inches deep. Heat the oil to 350°F (175°C) using a thermometer to ensure accuracy.

Step 5: Fry the Zeppole

Carefully place the piped dough into the hot oil, a few at a time. Do not overcrowd the pan. Fry for about 4-5 minutes on each side or until golden brown. Use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to drain the excess oil.

Step 6: Fill and Serve

Once the zeppole are cooled, use a pastry bag to fill each zeppole with pastry cream. Dust with powdered sugar for a sweet finish. You can also top them with chocolate sauce or fresh fruit for added flavor.
