Step-by-Step Instructions

1. Prepare the Dough

In a large mixing bowl, combine the flour, sugar, and salt. Create a well in the center and add the eggs, melted butter, and vanilla extract. Mix well.
Gradually pour in the yeast mixture and knead until a soft dough forms. This should take about 10 minutes.

2. Let the Dough Rise

Transfer the dough to a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours or until it has doubled in size.

3. Shape the Frittelle

Once the dough has risen, punch it down and turn it out onto a floured surface. If you'd like to add fillings such as raisins or candied orange peel, fold them into the dough now.
Divide the dough into small pieces and shape them into balls or discs, approximately the size of a golf ball.

4. Heat the Oil

In a deep pot or fryer, heat the oil to 170-180°C (340-360°F). It’s important to use enough oil so that the frittelle can float while frying.

5. Fry the Frittelle

Carefully drop the shaped dough balls into the hot oil, working in small batches to avoid overcrowding. Fry them until they are golden brown, turning occasionally to ensure even cooking. This should take about 3-4 minutes per side.
Once cooked, remove the frittelle with a slotted spoon and place them on paper towels to drain excess oil.

6. Serve and Enjoy

Allow the frittelle to cool slightly. Dust them generously with powdered sugar before serving. Enjoy them warm, paired with a cup of coffee or hot chocolate!
