How to Make Italian Frittelle, the Fried Dough of Venice

Frittelle, the delightful fried dough treats from Venice, are a beloved staple during the Carnival season. These sweet, fluffy pastries are filled with delicious ingredients, making them a perfect indulgence for any occasion. In this article, we’ll guide you through the process of making authentic Italian Frittelle at home.

Ingredients Needed

  • 500g all-purpose flour
  • 200ml warm milk
  • 100g sugar
  • 2 large eggs
  • 50g unsalted butter, melted
  • 20g fresh yeast (or 7g active dry yeast)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Optional fillings: raisins, candied orange peel, or apple chunks
  • Oil for frying
  • Powdered sugar for dusting

Step-by-Step Instructions

1. Prepare the Dough

In a small bowl, dissolve the fresh yeast in warm milk and allow it to activate for about 10 minutes. If using active dry yeast, ensure it becomes frothy before proceeding.
In a large mixing bowl, combine the flour, sugar, and salt. Create a well in the center and add the eggs, melted butter, and vanilla extract. Mix well.
Gradually pour in the yeast mixture and knead until a soft dough forms. This should take about 10 minutes.

2. Let the Dough Rise

Transfer the dough to a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours or until it has doubled in size.

3. Shape the Frittelle

Once the dough has risen, punch it down and turn it out onto a floured surface. If you'd like to add fillings such as raisins or candied orange peel, fold them into the dough now.
Divide the dough into small pieces and shape them into balls or discs, approximately the size of a golf ball.

4. Heat the Oil

In a deep pot or fryer, heat the oil to 170-180°C (340-360°F). It’s important to use enough oil so that the frittelle can float while frying.

5. Fry the Frittelle

Carefully drop the shaped dough balls into the hot oil, working in small batches to avoid overcrowding. Fry them until they are golden brown, turning occasionally to ensure even cooking. This should take about 3-4 minutes per side.
Once cooked, remove the frittelle with a slotted spoon and place them on paper towels to drain excess oil.

6. Serve and Enjoy

Allow the frittelle to cool slightly. Dust them generously with powdered sugar before serving. Enjoy them warm, paired with a cup of coffee or hot chocolate!

Tips for Perfect Frittelle

  • Use fresh yeast for the best results and flavor.
  • Feel free to experiment with fillings; chocolate chips or a hint of lemon zest can add a unique twist.
  • Be patient during the rising process; a warm, draft-free location will help your dough expand beautifully.
  • Maintain the oil temperature to ensure crispy edges without greasy interiors.

Making Italian frittelle at home can be a fun and rewarding experience. With this simple recipe, you can bring a taste of Venice to your kitchen, impressing family and friends with these scrumptious fried delights. Buon Appetito!
