Ingredients

To make a traditional Torta della Nonna, you will need the following ingredients:

  • For the Shortcrust Pastry:
  • 300g (2 ½ cups) all-purpose flour
  • 150g (3/4 cup) unsalted butter, chilled and cubed
  • 100g (1/2 cup) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • For the Custard Filling:
  • 500ml (2 cups) whole milk
  • 100g (1/2 cup) granulated sugar
  • 4 large egg yolks
  • 40g (1/4 cup) cornstarch
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional)
  • For the Topping:
  • 50g (1/2 cup) pine nuts
  • Powdered sugar for dusting

Instructions

Step 1: Prepare the Shortcrust Pastry

1. In a large mixing bowl, combine the flour, sugar, and salt. Add the cold, cubed butter and mix until the mixture resembles breadcrumbs.

2. Add the egg and vanilla extract, mixing until the dough comes together. If the dough is too crumbly, add a teaspoon of cold water.

3. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Step 2: Make the Custard Filling

1. In a saucepan, heat the milk over medium heat until it’s warm but not boiling.

2. In a separate bowl, whisk together the egg yolks, sugar, cornstarch, vanilla extract, and lemon zest until smooth.

3. Gradually pour the warm milk into the egg mixture while whisking continuously to temper the eggs.

4. Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens. Once thickened, remove from heat and let it cool.

Step 3: Assemble the Cake

1. Preheat the oven to 180°C (350°F).

2. On a floured surface, roll out the chilled pastry dough to fit a 23cm (9-inch) tart pan, leaving a little overhang. Press the dough into the pan and trim any excess.

3. Pour the cooled custard filling into the pastry shell, smoothing it out with a spatula.

4. Roll out the leftover pastry and cut into strips to form a lattice on top of the custard. Alternatively, you can simply cover it with another layer of pastry.

5. Sprinkle pine nuts over the top for added texture and flavor.

Step 4: Bake the Torta

1. Bake in the preheated oven for about 40–45 minutes, or until the pastry is golden brown.

2. Allow the cake to cool completely in the pan before removing.

Step 5: Serve

1. Once cooled, dust the top with powdered sugar for a delightful finish.

2. Slice and serve your Torta della Nonna at room temperature or slightly chilled. It pairs beautifully with a cup of coffee or tea.
