Spaghetti Aglio e Olio

Spaghetti Aglio e Olio is a simple yet delicious dish that highlights the beauty of fresh ingredients. Here's how to make it:

Ingredients:

  • 400g spaghetti
  • 6 cloves garlic, thinly sliced
  • ½ cup extra virgin olive oil
  • 1 tsp red pepper flakes (adjust to taste)
  • Salt, to taste
  • Fresh parsley, chopped for garnish
  • Grated Parmesan cheese (optional)

Instructions:

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the sliced garlic to the skillet and sauté until it turns golden, about 2-3 minutes.
  4. Add the red pepper flakes to the garlic and oil mixture, stirring for an additional minute.
  5. Once the pasta is cooked, reserve 1 cup of the pasta water and then drain the spaghetti.
  6. Add the hot spaghetti directly to the skillet with the garlic and oil, tossing to coat evenly.
  7. If the pasta seems dry, add some reserved pasta water, a little at a time, until the desired consistency is reached.
  8. Season with salt and garnish with fresh parsley. Serve hot, topped with grated Parmesan cheese if desired.

Margherita Pizza

Nothing says Italian comfort quite like a homemade Margherita pizza. With fresh tomatoes, mozzarella, and basil, it's a must-try!

Ingredients:

  • 250g pizza dough
  • 200g fresh mozzarella cheese, sliced
  • 2-3 ripe tomatoes, sliced or crushed
  • Fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • Salt, to taste

Instructions:

  1. Preheat your oven to the highest setting (preferably around 250°C or 480°F).
  2. On a floured surface, stretch out the pizza dough to your desired thickness, creating a round shape.
  3. Transfer the dough to a lightly floured pizza peel or a baking sheet lined with parchment paper.
  4. Spread the crushed tomatoes evenly over the dough, leaving a border for the crust.
  5. Arrange the mozzarella slices on top of the tomatoes, then sprinkle with salt.
  6. Drizzle olive oil over the pizza for added flavor.
  7. Carefully slide the pizza into the preheated oven and bake for about 10-15 minutes, or until the crust is golden and the cheese is bubbling.
  8. Remove from the oven and top with fresh basil leaves. Serve hot!

Tiramisu

This classic Italian dessert is the perfect way to end your meal with a touch of sweetness.

Ingredients:

  • 250g mascarpone cheese
  • 3 eggs, separated
  • 100g sugar
  • 1 cup strong brewed coffee, cooled
  • 24 ladyfingers
  • Cocoa powder, for dusting

Instructions:

  1. In a mixing bowl, whisk the egg yolks and sugar until pale and creamy.
  2. Gently fold the mascarpone cheese into the egg mixture until smooth.
  3. In another bowl, beat the egg whites until stiff peaks form, then fold them gently into the mascarpone mixture.
