How to Make Classic Italian Meat-Based Sauces

Italian cuisine is renowned for its rich flavors and hearty dishes, and at the heart of many classic recipes lies a delicious meat-based sauce. These sauces not only enhance the taste of pasta but also serve as a flavorful foundation for various dishes. In this article, we will explore how to make some traditional Italian meat-based sauces that you can easily recreate at home.

1. Ragu alla Bolognese

Ragu alla Bolognese, often simply called Bolognese sauce, is a staple in Italian cooking, especially in the Emilia-Romagna region. This rich, slow-cooked sauce combines ground meat, tomatoes, and aromatic vegetables.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 400g ground beef
  • 200g ground pork
  • 1 cup dry red wine
  • 400g canned tomatoes, crushed
  • Salt and pepper to taste
  • 1 cup whole milk
  • Fresh basil and parmesan cheese for serving

Instructions:

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion, carrot, and celery and sauté until softened, about 5-7 minutes.
  2. Add the ground beef and pork, cooking until browned.
  3. Pour in the red wine and let it simmer until evaporated, stirring occasionally.
  4. Stir in the crushed tomatoes and season with salt and pepper.
  5. Cover the saucepan and let it simmer on low heat for about 1.5 to 2 hours, stirring occasionally.
  6. Finally, add the milk and cook for an additional 30 minutes.
  7. Serve over your favorite pasta, garnished with fresh basil and grated parmesan cheese.

2. Sugo di Carne (Meat Sauce)

Sugo di Carne is a versatile Italian meat sauce that can be used with various pasta types. It’s hearty and packed with flavor, making it a perfect choice for a family dinner.

Ingredients:

  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 500g ground beef or a mix of beef and pork
  • 1 can (400g) of peeled tomatoes
  • 2 tablespoons tomato paste
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • Fresh parsley for garnish

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  2. Increase heat and add the ground meat, cooking until browned.
