How to Make an Italian-Style Stuffed Bell Pepper

Ingredients

  • 4 large bell peppers (any color)
  • 1 cup cooked rice (white or brown)
  • 1 pound ground beef or Italian sausage
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

Preparing the Bell Peppers

1. Preheat your oven to 375°F (190°C).

2. Cut the tops off the bell peppers and remove the seeds and membranes. Set the tops aside for later use.

3. Place the hollowed-out peppers upright in a baking dish. You can add a little water to the bottom of the dish to help steam the peppers while they cook.

Making the Filling

4. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté until transparent, about 5 minutes.

5. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

6. Stir in the ground beef or Italian sausage, breaking it apart with a spatula. Cook until browned and cooked through, about 6-8 minutes. Drain any excess fat.

7. Add the cooked rice, drained diced tomatoes, dried oregano, dried basil, salt, and pepper. Mix everything together, allowing the flavors to meld for about 5 minutes.

8. Remove the skillet from heat and stir in the mozzarella cheese, reserving some for topping the peppers.

Stuffing the Peppers

9. Carefully spoon the filling into each bell pepper, packing it down gently to fit as much as possible.

10. Top each stuffed pepper with remaining mozzarella and a sprinkle of Parmesan cheese.

Baking

11. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

12. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

Serving Suggestions

Once cooked, remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with fresh parsley for added flavor and color. Serve them warm, alongside a leafy green salad or garlic bread to complete the meal.
