Step-by-Step Instructions

Step 1: Preparing the Puff Pastry

If using store-bought puff pastry, roll it out on a lightly floured surface until it’s about 3mm thick. If you're making homemade puff pastry, follow your preferred recipe. Cut the pastry into three equal rectangles, ensuring they are the same size.
Preheat your oven to 200°C (390°F). Place the rectangles on a baking sheet lined with parchment paper. Brush the tops lightly with beaten egg for a golden finish.

Step 2: Baking the Pastry

Weight down the pastry with another baking tray to prevent it from puffing too much. Bake in the preheated oven for about 20-25 minutes until golden brown and crisp. After baking, allow them to cool completely on a wire rack.

Step 3: Making the Pastry Cream

In a saucepan, pour the milk and heat it over medium heat until it’s just about to boil. Meanwhile, whisk together the egg yolks, granulated sugar, and cornstarch in a separate bowl until smooth.
Once the milk is hot, gradually pour it into the egg mixture, whisking constantly to prevent the eggs from scrambling. Return the mixture to the saucepan and cook over medium heat while stirring until it thickens, about 5-7 minutes. Remove from heat and stir in the vanilla extract and butter until fully incorporated.
Transfer the pastry cream to a bowl, cover it with plastic wrap touching the surface to prevent a skin from forming, and refrigerate until cool.

Step 4: Assembling the Millefoglie

Once the puff pastry and pastry cream have cooled, it’s time to assemble your Millefoglie.
Place one rectangle of puff pastry on a serving platter. Spread a generous layer of pastry cream on top. Add a second pastry layer and repeat the process, continuing with layers until you've used all the pastry. Finish with a final layer of pastry on top.

Step 5: Finishing Touches

Dust the top layer with powdered sugar for a classic finish. You can also drizzle dark chocolate or caramel sauce over the top for added flavor and presentation.
To serve, cut the Millefoglie into squares or rectangles with a sharp knife, wiping the blade between cuts for clean slices.
