Step 1: Prepare the Gelatin

Start by blooming the gelatin. In a small bowl, add the gelatin powder and pour in 3 tablespoons of cool water. Stir gently and let it sit for about 5-10 minutes until it thickens.

Step 2: Heat the Cream Mixture

In a medium saucepan, combine the heavy cream, whole milk, sugar, and a pinch of salt. Heat the mixture over medium heat until it’s warm, but do not let it boil. Stir occasionally to dissolve the sugar completely.

Step 3: Add the Gelatin

Once the cream mixture is warmed, remove it from the heat and add the bloomed gelatin. Stir well until the gelatin is fully dissolved. If you are using vanilla extract, mix it in at this stage. If you’re using vanilla bean, split the bean, scrape out the seeds, and add both seeds and pod to the mixture.

Step 4: Pour and Chill

Strain the mixture through a fine-mesh sieve into a large measuring cup or a bowl. This will remove any lumps and the vanilla pod.
Pour the mixture into individual serving glasses or molds. Allow them to cool to room temperature before transferring them to the refrigerator.

Step 5: Refrigerate

Chill the Panna Cotta in the refrigerator for at least 4 hours, or until set. The dessert should be firm to the touch but still jiggle slightly when you shake it gently.

Serving Suggestions

Once set, you can serve the Panna Cotta directly in the glasses, or gently unmold them onto dessert plates. To add a burst of flavor, top with fresh berries, a drizzle of chocolate sauce, or a fruit coulis. Consider garnishing with mint leaves for an elegant touch.
