How to Make the Perfect Italian Cannoli

Cannoli are a classic Italian dessert, beloved for their crisp shells and sweet, creamy filling. Ingredients for Cannoli Shells

To make the shells, you will need:

  • 1 large egg
  • 1 tablespoon white wine or vinegar

5. Wrap each circle around a cannoli tube form, sealing the edges with a little water. Make sure the edges are well sealed to keep the filling from leaking out.

Frying the Cannoli Shells

1. Heat the vegetable oil in a deep pan or fryer to around 350°F (175°C).

2. Carefully place the cannoli shells in the hot oil, frying them until they are golden brown, about 2-3 minutes. Turn them occasionally for even frying.

3. Remove the shells from the oil and place them on a paper towel-lined plate to drain excess oil. Let them cool completely before removing them from the tubes.

Preparing the Cannoli Filling

1. In a mixing bowl, combine the drained ricotta cheese, powdered sugar, vanilla extract, and ground cinnamon. Mix until smooth.

2. If desired, fold in mini chocolate chips for added flavor and texture.

3. For a more elegant presentation, refrigerate the filling for about 30 minutes to firm it up.

Assembling the Cannoli

1. Once the cannoli shells have completely cooled, carefully remove them from the tubes.

2. Using a piping bag or a small spoon, fill each shell with the ricotta mixture from both ends for the best flavor experience.

3. Dust the filled cannoli with powdered sugar before serving. You can also garnish them with chopped pistachios, more chocolate chips, or even candied orange peel for a touch of elegance.

- Make sure to drain the ricotta cheese well to avoid a watery filling. Use cheesecloth for best results.
