1. Eggplant Parmesan

Eggplant Parmesan is a classic Italian dish that can easily be made healthier. Instead of deep-frying the eggplant, try oven-baking it for a lighter version.

Ingredients:

  • 2 medium eggplants, sliced into 1/2-inch rounds
  • 1 cup whole wheat breadcrumbs
  • 1 cup marinara sauce (preferably homemade)
  • 1 cup part-skim mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish
  • Olive oil spray

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Spray a baking sheet with olive oil and place the eggplant slices in a single layer. Lightly spray the tops of the slices with more olive oil.
  3. Bake for about 25 minutes, flipping halfway through, until the eggplant is soft and golden.
  4. In a baking dish, layer the baked eggplant, marinara sauce, mozzarella, and Parmesan cheese. Repeat until all ingredients are used, finishing with cheese on top.
  5. Bake in the oven for an additional 20 minutes until the cheese is bubbly and golden.
  6. Garnish with fresh basil leaves before serving.

2. Eggplant Rollatini

Eggplant Rollatini is a hearty yet healthy Italian dish that features eggplant filled with ricotta cheese and spinach.

Ingredients:

  • 2 medium eggplants, sliced lengthwise into thin sheets
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Spray a baking sheet with olive oil and lay the eggplant slices flat. Bake for about 15 minutes until they are softened.
  3. In a mixing bowl, combine ricotta cheese, chopped spinach, Parmesan cheese, beaten egg, salt, and pepper.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish. Fill each eggplant slice with the ricotta mixture and roll them up. Place them seam-side down in the sauce.
  5. Top with more marinara sauce and cheese.
  6. Bake for 25-30 minutes until bubbly and golden.

3. Ratatouille

While ratatouille is originally a French dish, it has been embraced by Italian cuisine due to its heart-healthy ingredients and emphasis on vegetables.

Ingredients:

  • 1 medium eggplant, diced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups crushed tomatoes (canned or fresh)
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions:

  1. In a large skillet or pot, heat olive oil over medium heat. Add onion and garlic, sautéing until translucent.
  2. Add the diced eggplant, zucchini, and bell pepper. Cook until vegetables are softened.
  3. Stir in the crushed tomatoes, Italian seasoning, salt, and pepper.
