Instructions

Step 1: In a medium-sized skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, about 5 minutes.

Step 2: Stir in the minced garlic and cook for an additional 1-2 minutes until the garlic is fragrant. Be careful not to let it burn, as this can alter the flavor of the sauce.

Step 3: Pour in the can of diced tomatoes, including the juice, and stir well. Let the mixture simmer for about 10 minutes, allowing the flavors to meld together.

Step 4: Once the sauce has thickened slightly, add the rinsed capers and chopped olives. Stir in the dried oregano and red pepper flakes if you desire a little heat. Season with salt and pepper to taste.

Step 5: Continue to simmer the sauce for another 5-10 minutes, stirring occasionally. This will give the capers and olives time to infuse their briny flavor into the sauce.

Step 6: Once finished, remove the skillet from heat. For an added touch, chop fresh basil or parsley and sprinkle it over the sauce before serving.
