1. Roasting the Eggplant

2. Roasting the Garlic

While the eggplant is roasting, prepare the garlic. Take the whole head of garlic and peel away the outer layers, leaving the skins on the bulbs. Drizzle with olive oil and wrap it in aluminum foil.

3. Blending the Ingredients

Once both the eggplant and garlic are done roasting, remove them from the oven and allow them to cool slightly. Scoop the eggplant flesh into a mixing bowl. Squeeze the roasted garlic cloves out of their skins and into the bowl with the eggplant.

Using a fork or a food processor, mash or blend the mixture until it reaches your desired consistency. If you prefer a chunkier spread, mash it with a fork; for a smoother texture, use a food processor.

4. Seasoning the Spread

Add salt, pepper, lemon juice, and chopped parsley to the bowl. Mix well to combine all the flavors. Adjust the seasoning according to your taste; you may want to add more salt or lemon juice for brightness.

Serving Suggestions
