Instructions

Step 1: Prep the Peppers

Start by preheating your oven to 375°F (190°C). While the oven is heating, carefully slice the tops off the bell peppers and remove the seeds and membranes. Set aside the tops for later use, or discard them if you prefer.

Step 2: Cook the Vegetables

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.

Next, add the diced zucchini and mushrooms. Cook until the vegetables are softened, which should take about 5–7 minutes. Finally, stir in the chopped spinach and cook until wilted.

Step 3: Mix the Stuffing

In a large bowl, combine the cooked quinoa or rice, sautéed vegetables, diced tomatoes (with their juice), dried oregano, dried basil, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Step 4: Stuff the Peppers

Take the prepared bell peppers and fill each one generously with the vegetable mixture. If desired, top each stuffed pepper with shredded mozzarella cheese for an added layer of flavor.

Step 5: Bake

Place the stuffed peppers upright in a baking dish. If they don't stand on their own, you can trim the bottom slightly to create a flat base. Cover the dish with aluminum foil to prevent the peppers from drying out. Bake for 25 minutes, then remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is bubbly and golden.

Step 6: Serve and Enjoy

Once the stuffed peppers are done baking, remove them from the oven and let them sit for a few minutes. Serve warm as a delightful main dish. These Italian-style stuffed peppers can be enjoyed on their own or paired with a side salad for a complete meal.
