How to Make an Italian-Style Lentil and Tomato Stew

If you’re looking for a hearty, nutritious dish that’s inspired by classic Italian flavors, an Italian-style lentil and tomato stew is perfect. Packed with protein and fiber, this stew is not only healthy but also incredibly satisfying. Follow this simple recipe to create a delightful meal that will warm your soul.

Ingredients

  • 1 cup dried green or brown lentils
  • 1 can (14 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 large carrot, diced
  • 1 celery stalk, diced
  • 4 cups vegetable broth or water
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

Step 1: Prepare the Lentils
Rinse the lentils under cold water to remove any debris. Drain and set aside.

Step 2: Sauté Vegetables
In a large pot, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes, until the vegetables are softened and the onion is translucent.

Step 3: Add Garlic and Seasonings
Add the minced garlic, oregano, and basil to the pot. Stir for about 1 minute, allowing the garlic to release its aroma.

Step 4: Combine Ingredients
Stir in the rinsed lentils and the canned tomatoes (with their juices). Pour in the vegetable broth or water and stir to combine all the ingredients.

Step 5: Cook the Stew
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes or until the lentils are tender. Stir occasionally, and add more broth or water if the stew becomes too thick.

Step 6: Season and Serve
Once the lentils are cooked, taste the stew and season with salt and pepper as needed. Remove from heat and let it rest for a few minutes before serving. Garnish with fresh parsley if desired.

Serving Suggestions

This Italian-style lentil and tomato stew pairs beautifully with crusty bread or over a bed of rice for a complete meal. For a touch of creaminess, consider adding a dollop of pesto or a sprinkle of Parmesan cheese on top.

Storage Tips

Leftover stew can be stored in an airtight container in the refrigerator for up to 3 days. The flavors tend to deepen over time, making it just as delicious reheated. You can also freeze individual portions for a quick meal later on.

Enjoy this comforting and nutritious Italian-style lentil and tomato stew any day of the week!
