Instructions

Step 1: Prepare the Vegetables

Begin by preheating your oven to 375°F (190°C). In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are soft and fragrant, approximately 3-5 minutes.

Add the sliced zucchinis and eggplants to the skillet, along with the chopped bell pepper. Cook for about 5-7 minutes, stirring occasionally until the vegetables start to soften. Season with salt and pepper.

Step 2: Layer the Gratin

In a greased baking dish, start layering the cooked vegetables. First, spread half of the sautéed mixture across the bottom. Next, add half of the cherry tomatoes over the vegetables.

Sprinkle half of the Parmesan and mozzarella cheeses over this layer. Repeat the process with the remaining sautéed mixture, cherry tomatoes, and top it off with the rest of the cheeses.

Step 3: Add the Cream

Pour the heavy cream evenly over the top of the layered vegetables. This will bind all the ingredients together while baking, resulting in a creamy and delicious gratin.

Step 4: Bake

Cover the baking dish with aluminum foil to prevent the top from burning. Bake in the preheated oven for about 30 minutes. After 30 minutes, remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden and bubbly.
