Italian-style lobster pasta is a delightful dish that combines the rich flavors of succulent lobster with a savory tomato and garlic sauce, creating a meal that feels noble yet can be made in the comfort of your home. Below is a simple but exquisite recipe that will guide you through the process of creating this Italian delicacy.

Ingredients

  • 2 live lobsters (1.5 pounds each)
  • 400 grams of spaghetti or linguine
  • 3 tablespoons olive oil
  • 4 cloves of garlic, minced
  • 1 small onion, finely chopped
  • 1 can (400 grams) of crushed tomatoes
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup white wine (preferably dry)
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese (optional)

Instructions

Step 1: Prepare the Lobster

Begin by cooking the lobsters. Fill a large pot with water, adding a generous pinch of salt, and bring it to a boil. Add the lobsters, cover, and cook for about 8-10 minutes until they turn bright red. Once done, remove them from the pot and allow them to cool. When cool enough to handle, extract the meat from the claws and tails, and cut it into bite-sized pieces. Keep the shells for enhancing the broth later.

Step 2: Cook the Pasta

In the same pot, bring salted water to a boil again and cook the spaghetti or linguine according to package instructions until al dente. Reserve a cup of pasta water, then drain the pasta and set aside.

Step 3: Make the Sauce

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent, about 2-3 minutes. Add the red pepper flakes and stir for another minute, enhancing the dish's flavor profile.

Pour in the white wine and simmer for a few minutes, allowing the alcohol to evaporate. Next, add the crushed tomatoes and the reserved lobster shells to the sauce. Stir well, and let the mixture simmer for about 10-15 minutes until slightly thickened. Season with salt and black pepper to taste. Remove the shells prior to adding the lobster meat.

Step 4: Combine and Serve

Once the sauce is ready, gently fold in the cooked lobster meat and let it warm through for just a couple of minutes. Add the drained pasta to the skillet, tossing to combine everything evenly. If needed, add some reserved pasta water to achieve your desired sauce consistency.

Once combined, serve the lobster pasta hot, garnished with fresh basil leaves and optional grated Parmesan cheese. Pair this dish with a glass of white wine for a truly authentic Italian experience.
