How to Make Italian-Style Seafood Ravioli

Italian-style seafood ravioli is a delightful dish that combines the rich flavors of the sea with the comforting charm of homemade pasta. Ingredients

For the pasta dough:

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil

For the seafood filling:

  • 1 cup shrimp, peeled and deveined
  • 1 cup scallops
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste

For the sauce:

  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup white wine (optional)
  • Fresh basil for garnish

Preparing the Pasta Dough

1. On a clean surface, form the flour into a mound. Make a well in the center and add the eggs, salt, and olive oil.

2. Gradually mix the flour with the eggs using a fork, pulling from the edges of the well until a rough dough forms.

3. Knead the dough for about 10 minutes until it becomes smooth and elastic. Wrap it in plastic wrap and let it rest for at least 30 minutes at room temperature.

Making the Seafood Filling

1. In a skillet over medium heat, add a splash of olive oil and sauté the garlic until fragrant.

2. Add the shrimp and scallops, cooking until just done, about 3-4 minutes. Let them cool slightly, then chop finely.

3. In a mixing bowl, combine the chopped seafood, ricotta cheese, Parmesan cheese, parsley, salt, and pepper. Mix well until thoroughly combined.

Rolling Out the Dough

1. Divide the rested dough into four pieces. Keep the unused portions covered to prevent them from drying out.

2. Using a pasta machine or a rolling pin, roll each piece of dough into thin sheets, about 1/16 inch thick. Dust with flour to prevent sticking.

Assembling the Ravioli

1. Lay one sheet of pasta on a clean, floured surface. Spoon small mounds of the seafood filling (about a teaspoon each) onto the dough, leaving space between them.

2. Moisten the edges of the pasta with water, and place another sheet of pasta on top.

3. Press around each mound of filling to seal, ensuring there are no air pockets. Cut out individual ravioli using a sharp knife or a pastry cutter.

4. Place the finished ravioli on a floured baking sheet while you finish the remaining dough.

Cooking the Ravioli

1. Bring a large pot of salted water to a boil. Gently add the ravioli, cooking for about 3-4 minutes or until they float to the surface.

2. Use a slotted spoon to remove the ravioli and let them drain.

Preparing the Sauce

1. In a large skillet, heat olive oil over medium heat. Sauté the garlic until golden.

2. Add the cherry tomatoes and cook until they begin to soften.

3. If using, pour in the white wine and simmer for a few minutes until it reduces slightly.

Serving the Ravioli

1. Carefully add the cooked ravioli to the skillet and toss gently to coat in the sauce.

2. Serve hot, garnished with fresh basil and additional grated Parmesan if desired.
