  2. Soak in Vinegar: Place the cleaned anchovies in a shallow dish and pour the white wine vinegar over them. Make sure the anchovies are fully submerged. Let them soak for about 30 minutes to 1 hour. This step helps to pickle the fish and enhance their flavor.
  3. Prepare the Marinade: In a separate bowl, combine the lemon juice, olive oil, sliced garlic, red pepper flakes, salt, and pepper. Mix well to create a flavorful marinade.
  4. Marinate the Anchovies: After soaking, drain the anchovies from the vinegar and gently pat them dry with paper towels. Layer the anchovies in a clean, airtight jar or container, pouring the marinade over each layer. Ensure that all the anchovies are covered in the marinade.
  5. Chill and Serve: Seal the jar or container and refrigerate the marinated anchovies for at least 3 hours, but for best results, let them marinate overnight. This allows the flavors to meld beautifully.
