Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons active dry yeast
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 1½ cups warm water (110°F/43°C)
  • ¼ cup olive oil, plus extra for drizzling
  • Assorted vegetables (e.g., cherry tomatoes, bell peppers, red onions, zucchini, and olives)
  • Fresh herbs (e.g., rosemary or thyme)
  • Coarse sea salt for topping

Instructions

Step 1: Prepare the Dough

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy. This means that the yeast is activated.

In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Use a wooden spoon to mix until the dough begins to come together.

Transfer the dough onto a floured surface and knead for about 8-10 minutes until it’s smooth and elastic.

Step 2: Let the Dough Rise

Place the kneaded dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1-2 hours. The dough should double in size.

Step 3: Prepare the Vegetables

Step 4: Shape the Focaccia

Once the dough has risen, punch it down to release the air. Transfer it onto a parchment-lined baking sheet. Use your fingers to gently stretch and press the dough outwards to fit the pan, creating dimples on the surface.

Step 5: Add the Toppings

Arrange the prepared vegetables evenly over the surface of the dough. Press them gently into the dough. Drizzle a little olive oil over the top and sprinkle with coarse sea salt.

Step 6: Second Rise

Cover the pan loosely with a cloth and allow the focaccia to rise for another 30-45 minutes.

Step 7: Bake the Focaccia

Preheat your oven to 425°F (220°C). Once the focaccia has completed its second rise, place it in the preheated oven and bake for about 20-25 minutes or until golden brown.

Step 8: Cool and Serve

Remove the focaccia from the oven and let it cool in the pan for a few minutes before transferring it to a wire rack. Once cooled, slice and serve warm or at room temperature. This Italian-style focaccia pairs wonderfully with olive oil for dipping and can be enjoyed as a standalone dish or as a side.
