How to Make Traditional Italian Torta Della Nonna

Torta della Nonna, or "Grandmother's Cake," is a classic Italian dessert that has captured the hearts of many. This rich and creamy custard tart topped with pine nuts is perfect for any occasion. In this article, we'll guide you through the steps to make this delightful treat right in your own kitchen.

Ingredients

To make a traditional Torta della Nonna, you will need the following ingredients:

  • For the pastry:
  • 300g all-purpose flour
  • 150g unsalted butter, softened
  • 100g powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt
  • For the filling:
  • 500ml whole milk
  • 4 large egg yolks
  • 120g granulated sugar
  • 40g cornstarch
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • For the topping:
  • 50g pine nuts
  • Powdered sugar for dusting

Step-by-Step Instructions

1. Prepare the Pastry

In a large mixing bowl, combine the flour, powdered sugar, baking powder, and a pinch of salt. Add the softened butter and mix until crumbly. Then, add the eggs and vanilla extract. Mix until the dough comes together. If the dough is too sticky, you may add a little more flour.

Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.

2. Make the Custard Filling

While the pastry is chilling, prepare the custard. In a saucepan, bring the milk to a gentle simmer. In a separate bowl, whisk together the egg yolks, granulated sugar, cornstarch, vanilla extract, and lemon zest.

Once the milk is simmering, gradually pour it into the egg mixture while continuously whisking to prevent the eggs from scrambling. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and bubbles.

Remove from heat and let the custard cool.

3. Assemble the Torta della Nonna

Preheat your oven to 180°C (350°F). Take the chilled pastry dough out of the refrigerator and divide it into two parts, one slightly larger than the other.

Roll out the larger piece of dough on a floured surface to fit a 9-inch tart pan. Gently press the dough into the pan, trimming any excess that hangs over the edges.

Pour the cooled custard filling into the pastry crust, smoothing the top with a spatula.

Roll out the smaller piece of dough to create a top layer. You can either lay it over the custard filling as a whole or cut it into strips to create a lattice pattern. If using a whole layer, make sure to cut a few slits to let steam escape.

Sprinkle the pine nuts on top of the tart.

4. Bake the Tart

Bake the Torta della Nonna in the preheated oven for about 40-45 minutes, or until the crust is golden brown. Once baked, remove it from the oven and allow it to cool completely in the pan.

5. Serve and Enjoy

Once cooled, dust the top with powdered sugar before slicing. Torta della Nonna can be served as a delightful dessert or with coffee for a perfect afternoon treat.
