Tiramisu is a classic Italian dessert that combines layers of coffee-soaked ladyfingers and a rich mascarpone cream. This recipe elevates the traditional treat by incorporating Marsala wine, adding a deep flavor that perfectly complements the coffee and cocoa. Ingredients

To make the ultimate tiramisu, gather the following ingredients:

  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 2/3 cup Marsala wine
  • 1 1/4 cups mascarpone cheese
  • 1 1/2 cups heavy cream
  • 1 cup strong brewed coffee (cooled)
  • 24-30 ladyfinger cookies
  • 2 tablespoons unsweetened cocoa powder
  • Dark chocolate shavings (optional, for garnish)

Instructions

Step 1: Prepare the Marsala Mixture

In a heatproof bowl, whisk together the egg yolks and granulated sugar until the mixture becomes pale and thick. Place the bowl over a pot of simmering water (double boiler method) and continue whisking while slowly adding the Marsala wine. Cook for about 10 minutes, until the mixture thickens slightly. Remove from heat and let it cool.

Step 2: Mix the Mascarpone and Cream

Once the egg mixture is cool, gently fold in the mascarpone cheese until smooth. In a separate bowl, whip the heavy cream until soft peaks form, then carefully fold it into the mascarpone mixture. Be cautious not to deflate the whipped cream; the goal is to keep the mixture light and airy.

Step 3: Assemble the Tiramisu

In a shallow dish, pour the cooled coffee. Quickly dip each ladyfinger into the coffee, ensuring they are soaked but not soggy. Lay half of the soaked ladyfingers in a single layer at the bottom of a 9x13 inch dish.

Spread half of the mascarpone mixture over the ladyfingers, smoothing it evenly with a spatula. Repeat the process with another layer of soaked ladyfingers followed by the remaining mascarpone mixture.

Step 4: Chill and Serve

Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight. This allows the flavors to meld beautifully. Just before serving, dust the top with unsweetened cocoa powder and garnish with dark chocolate shavings if desired.
